By far my favourite food of the moment is this Laos chicken I pick up every other day. The chicken has marinated over a day or so in something, then fried, leaving it crispy on the edges and just absolutely delicious. It is always accompanied with a dark sauce known as 'nam jim', which I think is originally Vietnamese, although there are lots of different varieties and I am not sure as to the exact ingredients.... It is powerful stuff, sweet, sour, salty and spicy all in one mouthful.
Both the chicken and the sauce together, with some sticky rice, and I am one fat falang.
When Sutiya and I go for a sit down, she goes for this Laos Pork Salad instead. Looks can be deceiving, this is not for the faint hearted, it is very spicy, but once you can get used to the zangy flavour, it is delicious.
After a meal in this restaurant, it's always after you've eaten that the heat catches up with you... Sitting amongst empty plates and 'gorged', both of us sit there repeating various similar phrases like 'yeah, that's ones really spicy eh..... Wow,,,,,,,, is your mouth burning....? Wow they are both really spicy eh...... Yeah I can't belive that one, seems hotter than normal .......Pass the water please... It's all gone........ WAITER!'
(Actually that's probably just me)

Ben an interesting name for the sauce!!
